While eliminating gluten you should take extra care to check food labels and ingredients of your meal.
After you finish your elimination period, you reintroduce gluten or other possible allergens, slowly over 1 to 2 weeks. You should be able to determine if you have a digestive problem with gluten by charting your reactions during the period.
